Turns out, there is a lot more to Ireland than leprechauns, pubs, and shamrocks. Although, traveling through Ireland with my entire family was quite a treat, I was pleasantly surprised by the care and love the Irish had for their locally grown food and culinary traditions. What a beautiful country, what beautiful people, and what great food!
The castle above is where my family stayed for the majority of our time in Ireland. Springfield Castle is located in the heart of County Limerick and is situated on a beautiful 200 acre wooded estate. With lush rolling hills, amazingly grown trees, and even a soccer field on the side of the castle, this place was quite magical. It was an ideal vacation spot for a large group.
Cool Tidbit:The grounds also offer an organic farm in which you can take tours by the owner. The farm is quite impressive, and the herbs and salads grown here are produced for local markets.

Local farmers market in the village of Adare in County Limerick, Ireland. The farmers market is put on every Saturday in the center of the village, offering fresh fruit, vegetables, cakes, and more. Definitely visit this market with an appetite.

I was drawn in by Pandora Bell's bright and preppy booth that displayed beautifully wrapped handmade candies, confections, and chocolate milk! I ended up buying the honey and hazelnut nougat in a chocolate coating. YUM!! I did further research on the company and although they are based out of the west of Ireland, they ship their goodies worldwide. Anyone of their creations I am certain would be delicious and the packaging is girly and perfect! GREAT GIFT IDEA!
